Here in Hoo-ville, we all know the wahoo’s reputation as a fish that (ahem) can allegedly drink its own weight. But how about its reputation as a fierce fighter whose speed and strength are legendary in sporting circles?
That’s right, the wahoo is a warrior, with razor sharp teeth and an attitude to match. It’s also one of the fastest fish out there, boasting speeds up to 60mph. We join with UVA alumni everywhere in cheering the noble Wahoo!
We’re also here to tell you that wahoo is a very, very tasty fish. If you’ve not yet had the pleasure of enjoying this prize game fish, we invite you to join us over UVA Homecomings Weekend for a dinner you won’t forget.
Chef Curtis Shaver will serve grilled wahoo over a chorizo white bean ragout, with a lemon dill buerre blanc and sundried tomato olive tapenade. It’s a spectacular blend of seasonal flavors, hearty enough to fortify you for whatever your weekend may hold. Wahoowa!
